Jerky / Sausage Seasoning Scaler
Scale your own recipe up or down to match the meat weight you actually have.
How this works
This is simple proportional scaling: if a recipe is written for 5 lb of meat and you have 12 lb, every ingredient in that recipe scales up by the same 12÷5 ratio. It works for any ingredient measured in any consistent unit — teaspoons, tablespoons, ounces, or grams — as long as you enter the amount from your original recipe and scale each ingredient separately.
One ingredient at a time
Run this calculator once per ingredient in your recipe, since each one may have a different original amount even though they all scale by the same ratio. For curing salt specifically, cross-check the result against the Cure & Salt calculator's dosing guideline rather than relying on scaling alone.
Frequently asked questions
Does this work for liquid ingredients too?
Yes — it scales any ingredient measured in a consistent unit (teaspoons, ounces, grams) by the same ratio, whether it's a dry spice or a liquid like liquid smoke or soy sauce.
Should I scale my curing salt the same way?
Be extra careful there — cross-check any scaled curing-salt amount against the Cure & Salt calculator's own dosing guidance rather than relying on linear scaling alone, since curing salt has a real food-safety dimension.
Do I need to run this once per ingredient?
Yes — each ingredient in your recipe may start from a different original amount, so run the calculator separately for each one even though they all scale by the same meat-weight ratio.
